TIP OF THE WEEK: As the cost of eggs escalates weekly, it is best to buy the jumbo eggs. For a few pennies more it is almost like buying 2 dozen eggs for the price of one. If your recipe calls for 2 large eggs, and you have bought the jumbo eggs, you will only need one egg. An added bonus: frequently you will get 2 or 3 double-yoke eggs within one carton of eggs.

As cold weather approaches and my hubby requested a pot of soup to warm him up, I thought nothing speaks love and home like a pot of homemade chicken noodle soup. When we have the sniffles and sneezes with a scratchy throat added, there is nothing like some chicken noodle soup to make us feel a little better. Below is my own version of this warming and healing version of a family favorite. As usual, I use boneless skinless chicken breasts with reduced sodium and fresh ingredients whenever possible.

CHICKEN NOODLE SOUP:

4 large boneless skinless chicken breasts

3 ribs celery, chopped

1 bag baby carrots, cut in half

1 large onion, chopped

1 large can chicken stock or broth

1 small box chicken stock or broth

1 bag broad egg noodles

Water

Place all ingredients in a large soup pot and bring to a boil. Stir and cover, then reduce heat to a slow simmer. Let cook until your vegetables are tender. Enjoy!!!
