Thanksgiving is a time of reflection and finding joy and contentment with each blessing we have — friends, family, and home. I am praying that each of you had a happy Thanksgiving and enjoy each of your blessings each day. Happy Thanksgiving!!!

One of my family’s favorite comfort food for winter is cabbage. There are so many ways to cook this diet-friendly vegetable; it is hard to focus on just one. But, when asked, my family will pick this recipe every time.

BACON AND CABBAGE:

1 head of cabbage, chopped

1 T. extra virgin olive oil

1 1/2 T. bacon bits

1/2 c. water

In a large, deep skillet or pot, place your olive oil and bacon bits. When the bacon bits become warm, add your chopped cabbage and water. Cover and simmer for about 10 minutes, stirring frequently. The stirring is to make sure the bacon bits get mixed throughout the cabbage so the flavor is dispensed equally.

Variations: Omit the bacon and add smoked sausage. Or, leave in the bacon bits and add chopped, pre-cooked potatoes. Each variation gives you a completely different taste and brings a delightful side dish to your table.

Tip of the week: Substitute using butter for flavor when baking meats such as chicken and pork by giving a nice spray of butter-flavored cooking spray instead.
